Cast Iron Cooking

Now I know the proper care and cleaning routine for my cast iron (thanks to LW) I've been using them more. Sunday night, I used the griddle to sear the steaks we were having, and they were the closet I've had at home that compares to a restaurant steak. Last night, I used it to make pancakes. now, not to be immodest, but I make a damn fine pancake! But using the cast iron resulted in probably the best pancakes I've ever made. They were full of yummy pancake perfection!

Cast iron's much better than teflon for most things. I need a teflon pan for anything with eggs, though, which invariably turn to dry nasty brown burnt stuff pratically on contact with iron. Or at least that's my relatively culinary-amateur experience.

Over Xmas my parents where here helping me because I have a broken leg. I cought my mother cleaning one of my cast iron pans. I just about died. I did not say anything, as she was trying to be helpful. I have never washed then. It will take me several months to get that pan back into good working order. The more you use them the better they get. As to cooking eggs, you must first of all set aside one pan just as your egg pan. I have a small 8 inch pan for this. The only thing that has ever been in that one is eggs. I just finished eating a meal of venison I cooked in my 14 inch pan. Oh man what a meal. Do enjoy.

Glad to hear it! Cast Iron really is the way to go for many things. :)

Cooking in cast iron is healthy. To take care of your cast iron be sure to coat with vegetable oil after washing. If they have rust use 1 tablespoon of citric acid and 2 cups water.
